Have you every had one of those moments?
I had one tonight! My dad called from California to check in and I answered the phone. After we had talked for a couple of minutes he asked to talk to my mom. Henry was in the room and I told my dad that I was going to have Henry take the phone to mom and he laughed and said "good luck". I told him that he could do it. I handed him the phone and told him to take it to "mama" and he grabbed it, walked out of the room, and took it to my mom. He's going to be alright! I have never lost faith in the fact that he would be alright and simple things like this make be belive even more that he will be alright. Sometimes that's all we have.

One Grapefruit too many....
So what do you do when you have been given a bagful of Grapefruits?
Juice them them and mix it with Vodka~whoo hoo! Party time!!!!!!
But alas, the sensible mom/grandmother (I was on grandmother duty last night, Ms. Silly spent the night) in me took over (which note to myself, stop listening to sense) and I made Sugared Grapefruit Peel. Which I thought would be well, yick, but it was/is actually really good. Almost like eating a grape flavored candy. Now how did you do this Janice, you may ask.... I searched the internet high and low and then winged it. The good news is, is that is is real easy and I took pictures!!!!
Here they are the stars of the show! Three grapefruits, have no idea what type; just 3 ordinary grapefruits (btw, I did wash them). Then I sliced them in to sections and cut out the grapefruit meat and sliced away the white membrane part from the skin.
This is what it should look like. You just want the skin left without any of the white membrane attached to it. I wonder if I could blender the grapefruit sections and it would juice up, something to try~I may get my grapefruit and Vodka yet :-)
It's not that it's hard, it's time consuming. That is where the grapefruit and Vodka come in, course by the end with that you won't really care if it turns out or not.

Drain. Cover with just water again, boil again, bring down to simmer and simmer for 20 minutes. Drain. Cover with just water again, boil again, bring down to simmer and simmer for another 20 minutes. So basically simmer for 20 minutes with salt water and twice without salt water. Then you are going to drain and cool for 10 minutes. After it is cool cut into pieces. Add 1 1/2 cups of sugar to 1 cup of water and boil and then turn to simmer and put in grapefruit slices and allow to simmer for 30-35 minutes. Once it has simmered drain liquid off of the grapefuit peel and quickly dip in sugar and put on tray to dry.

I'm still here, I promise!
I'm still here really. We went to South Carolina and decided in that time that we are going to stay in Florida until Pat graduates (another 4 years) and then who knows. So, I've let myself settle into the fact that I will be remaining in Florida for the unforeseen future and we have started the house hunt for a larger house. If truth be told, if I had known we were going to stay here I would have never sold my house~and that's the last I'll say on that subject. We got back from South Carolina and buyers have come out of the woodwork so I was showing houses all last week (take a wild guess on what I do for a living LOL and that is the last I'll say on my job as well :-). I have a lot of post that I want to post and pictures I want to show so stay tuned I'll be catching up on news as soon as I can.

Going away this weekend!
I hope everyone has a wonderful weekend! We are heading to South Carolina to look at some houses and will be back on Monday night. I do have some new foods we made for Henry, but do not have time to post now so I'll do a slew next week of that and Charelston, South Carolina.

Horse-Riding Therapy..
We've been sick, one of those head sinus colds that moves into your chest, then moves back up to your head, then goes from one person to the next and then back. Henry's been in and out of school and my sinus's won't stop draining. Feel sorry for us yet? LOL. I haven't felt like cooking so I haven't started on Henry's new menu, but I am starting to feel better so hopefully in the next day or so I will be back up to speed.
We did go to Henry's Horse therapy this weekend and as usual he had a great time. It's for a half hour on Saturday's. It takes us an hour and a half to get there so it's pretty much a half a day affair; but Henry gets so excited about it that it is totally worth it. So, here a few pictures of my sweetie on "Billie" the horse that he rides.
Henry getting on the horse for the first time. He's not to cooperative getting on, but loves it once he is on the horse.
He has one volunteer on each side with one at the head of the horse. He has really become attached to Matt the young man that works with him, it took him 3 weeks before he would let go of him while he was on the horse LOL.
Someone has gotten themselves in trouble! We're not sure sure what he/she did, but obviously they are being punished.
